CORN AND RAJMA SALAD

I made this salad for the first time while staying in Hollywood. My daughter was working in Paramount Pictures and we were staying in an apartment on Melrose Avenue. There was a farmers market nearby from where I could get fresh vegetables and fruits. I used to buy sweet white corn for making boiled corn (corn cooked with salt and pepper with a little chilli powder and lime juice added before serving) which is available in front of all the super markets in Kuwait. The corn was very cheap( 4 for $1) and I wanted to try some more dishes with it. I searched the net and made a salad combining the recipes of 2 different salads (corn salad and rajma salad) with a simple dressing (by Paula Deen,of course)

INGREDIENTS

1. Cooked corn (or canned) - 2 cups
2. Red kidney beans (Rajma) cooked or canned - 1/2 cup
3. Cherry tomatoes - 18-20
4. Chopped bell pepper (green or green and red) - 1/4 cup
5. Chopped red onion - 1/4 cup
6. Lime zest - 1/2 tea spoon
7. Lime juice - 1 1/2 table spoon
8. salt - 1 tea spoon
9. Freshly ground pepper - 1/2 tea spoon
10.  Olive oil - 1 table spoon

METHOD

1. Wisk together lime juice, salt, pepper and olive oil.2. Take corn, kidney beans, 8-10 tomatoes (quartered), bell pepper, onion and lime zest in a big bowl.

3. Add the dressing  and toss well.

4. Garnish with the remaining tomatoes.
