Manga curry or raw mango pickle is very easy to make. Unlike kaduku manga or aavakkai manga curry is made in small quantities since it doesnt stay fresh for long.
1. Raw mango - 2 med
2. Chilli powder - 1 table spoon
3. Salt - 1 tea spoon
4. Asafoetida - 1/4 tea spoon
5. Nallenna (sesame oil) - 1 1/2 table spoon
6. Mustard seeds - 1/2 tea spoon
7. Fenugreek - 1 pinch
8. curry leaves - 2 sprigs (optional)
METHOD
1. Remove skin and cut the mango into small pieces.
2. Add salt and mix well with hand. Add chilli powder and asafoetida and mix again.
3. Heat oil in a small pan. Splutter mustard seeds.Fry fenugreek and curry leaves. Pour over the mango and mix.
